This delicious relish is served as a accompaniment with a lot of different peruvian dishes. We recommend you to know how to prepare it by heart.
Preparation:

1 medium red onion
1 tablespoon of vegetable oil
1 fresh yellow pepper, chopped and cleaned (without seeds)
1/2 teaspoon of lime juice.
Salt
Pepper
1/2 tablespoon of chopped cilantro.

It’s simple: cut the onion in stripes, wash it in water (the peruvian onion has a strong smell) and mix it with the rest of ingredients. If you choose to use another type of onion there can be a bit of bitterness. To remove this you can try boiling it in salt water for a couple of minutes.

This is a seafood recipe my girlfriend makes for me at least every couple of weeks. Its one of my favorites. Its very simple to make and doesn't require too many ingredients. It will take about 20mins to whip up.
Ingredients:

300 g of white fish fillets
4 big squids
1 1/2 tablespoons of ground garlic
1/2 kg of cassava
1 1/2 cup of flour
1/2 cup of corn starch
12 prawns
4 crab claws
1 cup of octopus, cooked and cut into sheets
3 cups of vegetable oil
Kernels of one corn, cooked
1 1/2 cup of cancha (toasted corn kernels)
2 cups of Salsa Creole
Salt
Pepper

Preparation:
Cut the fish fillets in pieces and the squids in rings. Season with garlic, salt and pepper. The cassava must be cut in pieces too. Keep back.
Mix the flour and the corn starch. Flour the fish and the seafood. Fry all (wait until the oil gets very hot) until they get browned. Keep back.
Fry the cassava until it gets crispy. Remove from the heat and season with salt.
Mix the kernels with the fish and the seafood.
Optional
You can serve with cassava, cancha and Salsa Creole.

On my last trip to Peru around Christmas i was a bit astonished to discover that guinea pig was being promoted in the newspaper by the government as an alternative to turkey or chicken due to the shortage and to eat roast Guinea Pig instead. It is usually called "Cuy" of "Cobayo" or "Conejillo de Indias" It is usually served whole (head, paws, and all) with potatoes and vegetables. Sometimes it is separated into pieces. Since they are usually caught wild they tend to have a gamier flavor and are a leaner meat. In the past they used to be served to Incan royalty.

As of this date i heard there was an Ecuadorian restaurant that served it here in Toronto. When i find it i will update it here.

About 3 years ago i stumbled upon a guide called "Cheap Eats Toronto". This restaurant guide for Toronto compares prices and quality and gives you recommendations for the best cheap restaurants. This guide hasn't been updated since 2006 but most of the restaurants in this guide are still around and still have prices close to the guide.It's well worth your time to check out and can be bought online at cheapeatstoronto.com but you can still find copies of it at your local public library branch

2)Perola's at 247 Augusta - mostly has Mexican food but has some Peruvian dried herbs and peppers as well as hard and soft cheeses

3)Salamanca at 204 Baldwin St.(kensington market)- next to the store selling dried fruits/nuts. The owner is Peruvian that carries all Peruvian dried spices as well they have a freezer carrying fresher ingredients like rocoto & aji amarillo

4) If you are looking for Pisco you will not be able to find it in Ontario due to the LCBO. You may be able to find it in the US but can order it online at Compra-Segura.com
